A  large variety of lentils and beans are produced in Myanmar. These ingredients are packed with nutrients and they are used in many dishes, both for their nourishment and taste. This is a traditional lentil soup that is easy to prepare. It is served at almost every meal and has hints of Indian cuisine.



½ cup red lentils

2 tbsp peanut oil (or oil of your choice)

2 cloves garlic, peeled and finely chopped

1-cm (1/2 inch) knob of ginger, peeled and finely chopped

¼ tsp ground turmeric

6-7 curry leaves

1-litre (32fl oz/4 cups) water

Salt to taste

Chopped fresh coriander (optional)



Rinse the lentils in cold water

Leave to soak for 30 minutes

Drain well

Heat oil in frying pan at medium temperature

Add garlic, ginger, turmeric powder and curry leaves

Stir fry for about a minute

Add lentils and brown in oil

Add the water and cook for 30 minutes or until lentils are soft

Taste and season with salt

Serve hot, garnished with fresh, chopped coriander (optional)
